Oatmeal is NOT my favorite food. It’s a texture thing, I just can’t get around it. Even when I put lots of yummy toppings and crunchy garnishes. It’s just not my jam.
Oatmeal cookies on the other hand? I can get down with that! But they are ususally SO GOOD because of the massive amounts if sugar, butter and refined flour. Although those things are so good for mental health days and birthday parties, they kinda defeat the purpose of me eating more oatmeal right?
What makes these cookies deliciously nutricious are the simple, whole food ingredients. Organic oats, whole wheat flour, flax seed, unsweetened coconut, dark chocolate chunks. Whole grains, antioxidants, fiber, healthy fats…. They’re almost health food! (Don’t tell Lucy)
They become decadent when we combine the rich coconut oil, coconut flakes and chocolate.
These cookies are crunchy around the edges and soft and just a little gooey in the center. The chocolate chunks are a little melty. The combination of coconut and chocolate is a match made in oatmeal heaven. I’d eat oatmeal everyday if it was presented like this!
I almost always only make a half batch because we eat so many of these yummy oatmeal cookies if they’re hanging around. But go ahead, make a full batch and give them away, your friends, teachers and neighbors will thank you.

Preheat your oven to 350º. Whisk together the flour, salt and baking powder and set aside.
Prepare your flax eggs by mixing the flax seeds with the water and let sit to thicken while you cream together the coconut oil, cane sugar and brown sugar until light and fluffy.
Scrape down the sides of the bowl and add in the vanilla and the flax eggs, mixing well.
Stir in the flour mixture until just combined, and finally add in the chocolate, oatmeal and coconut.
Roll the cookies into 1 oz balls and space 1" apart on a parchment lined baking sheet. Bake 12-15 minutes until the edges are golden brown
