Mix up a batch of these watermelon mojitos, perfect for a backyard gathering to celebrate the dog days of summer.

Ingredients

  • 4 C Watermelon cubed
  • 2 Limes juiced
  • 1/4 C Mint Leaves
  • 6 oz Light Rum

Instructions

  1. Combine the watermelon and lime juice in the blender and blend on high speed to liquefy.  Strain the juice through a fine mesh seive (optional).

  2. In each of 4 tall glasses, split up the mint and pour in 1.5 oz of rum.  Muddle the rum and mint together with a cocktail muddler or a wooden spoon.  You just want to lightly crush the mint to release the flavor into the rum.

  3. Fill the glasses with ice and pour the watermelon juice over.  Give each cocktail a good stir, garnish with a slice of watermelon and some more mint and you're ready to go!
